Create an original salad in no time!
When I look into my fridge to make a salad, sometimes I have to dig through lots of bits of leftover vegetables and fruit. Creating a new salad with summer fruit matches the light, sweet style I want especially when I see a lime on the counter. A couple of handfuls of lettuce, two or three vegetables, diced fruit and a sprinkling of crunchy nuts checks off all the boxes for me. Squeeze a wedge of lime and pour a little olive oil over it and presto you have the makings of an original. Pair it with cranberry orange scones and you will have no reason to snack before dinner!
Here's one of my lunch recipes. Feel free to substitute ingredients depending on what's in your fridge.
Zippy Blueberry Cucumber Salad
1/4 cup fresh blueberries
1/4 cup red peppers, diced
1 mini cucumber, sliced
Goat cheese, crumbled (optional)
2 cups mesclun mix or other lettuce
2 tablespoons of pepitas (pumpkins seeds)*
Wedge of lime
1 tablespoon of olive oil (or more for taste)
Salt and pepper
Assemble the first 4 ingredients then sprinkle the pepitas on top. Squeeze the lime wedge all over the salad then drizzle with the olive oil. Season with salt and pepper to taste.
Also consider these toppings as substitutes: diced peaches, sliced strawberries, dried cranberries, snow peas, yellow peppers, carrot shavings/matchsticks, walnuts, cashews or pecans.
