Choosing a Quality Sheet Pan
I ran across an article in Cooking Light online (find link here) on choosing sheet pans that I found useful. If you don't have a sheet pan that you really like then it's time to invest in one that will be tough enough, provide consistent even heat and wear well through the next 10 years.
I picked up my heavy duty cooking sheets from a baking store years ago and have been thrilled with their performance and wear due to the abuse they have endured. Warp resistant with a rolled edge you can see the love patina baked onto the finish.
Parchment paper has been a game changer for me now that I use it for roasting vegetables as well as baking scones. I like it more than foil if there are no liquids involved to contain. Easy clean up is key and a quick hand wash with a soapy cloth makes my sheet ready to be dried and returned to the drawer.
You can find them in full and half sheets with or without a non stick surface. Many choices but go for quality and you won't be disappointing in how consistent your foods cook on it. Happy Cooking!
